1 Pack tortellini stuffed with cheese or prosciutto
1 big spoonful of butter
1 cup of mushrooms (fresh or canned)
1/2 cup wine (I use red for stronger taste)
250 ml of cream Parmesan cheese or other hard cheese of your liking
Pepper (preferably freshly ground)
Boil the tortellini in a pot, following the instructions on the pack. When they're done, drain the water and keep them warm.
Heat the butter in a wide pan, drain the mushrooms (if canned) and Sauté them until they "drink" their fluids.
Pour the wine in the pan and wait6 for some minutes so as the alcohol has evaporated. Add the cream, 1-2 spoonfulls of the cheese, salt& pepper to your liking and let the sauce simmer until it thickens.
Put the tortellini in the panful and stir until their all covered with the sauce. Be careful not to break them.
It is served hot in bowls or deep dishes and you can top them with more cheese if you want!
